This morning I woke up with a craving for french toast. I usually make it with banana (like in this recipe) but I ran out. Then I remembered I had a few Fuji apples in my fridge and that's when it hit me "I should make apple pie french toast"! This was perfect because coincidently this past Wednesday my group had to learn to make an apple pie for our Fundamentals of Food lab... It seems weird that Nutrition students have to take cooking classes but to me it makes so much sense. We get to learn about how our food is affected depending on the temperature, ingredients, pH levels, etc. I loved this lab. Anyways, enough about my food lab. Let's talk about this Apple Pie French toast! The ingredients for this are not very different from any other french toast recipe. The basic recipe is just bread, milk, egg, vanilla, and cinnamon. If you have these, you're good. But, if you have nutmeg, or pumpkin pie spice, and some apple (any kind) this will take it to the next level and will be your new go-to Sunday Brunch meal. I love it because it can easily feed either 1 person up to a crowd, and its way easier than pancakes haha. Recipe, (Serves 1): 2 slices Sprouted Grain Bread (or any bread you prefer) 1 egg Splash of Vanilla Almond Milk 1/2 tsp Vanilla extract Dash of cinnamon 1/4 tsp pumpkin pie spice or 1/8 tsp nutmeg, or 1/4 tsp apple pie spice Pinch of salt Non-stick cooking spray, butter, coconut oil etc (whatever you prefer to cook it in) For the apple: 1/3 of an apple (I used Fuji Apple but any kind will work), diced 1 tsp coconut sugar, or pure maple syrup, to taste Dash of cinnamon Pinch of salt 1-2 tbsp water Lemon Juice* (optional, read note) *If your apple is too sweet, you can add a squeeze of lemon juice too. Directions: Mix all the batter ingredients (except the bread) into a shallow dish. Heat up a skillet with some non-stick spray or with a little bit of butter, and while that heats up, dip your bread slices into the batter. I usually leave it 15 seconds per side. Then I transfer my bread into the pan, and cook on medium for about 2 minutes on each side or until the edges are golden brown. While the french toast cooks, start cutting up your apple, mix it with the spices, and heat it up for a minute in the microwave, or until the apples have softened. Then all you need to do is put the french toast in a plate, add the apples on top, and if you want, add more toppings of choice. Today I added almond butter and it hit the spot. . . .
