It's Back to School season! Looking for an easy, quick, on-the-go breakfast? No need to keep searching for it. These overnight oats are the perfect breakfast option. As a student, one of my goals for this semester was to meal prep a few lunches and/or dinners that I could have for at least 2-3 days in the week. But I thought: "why not make my life easier and meal prep some breakfast options as well?". By doing so, I have been able to sleep a little longer and have time to do other things in the morning. Overnight oats are an excellent breakfast option. They're packed with fiber, complex carbohydrates, protein and healthy fats (thanks to the chia seeds), which will help keep you fuller for longer! The best part is that you prepare them the night before and the next morning you just add your favorite toppings and enjoy! The recipe for the overnight oats below is for 1 serving. However, you can multiply the recipe and prepare various bowls/jars at once and have them ready for the rest of the week. I recommend that you consume them within 4-5 days maximum. Otherwise your oats might get too soft. Ingredients: 1/2 cup old fashioned rolled oats (NOT quick or instant oats) 1 scoop collagen peptides (or protein powder, optional)* 1 tsp chia seeds (or ground flaxseed, optional) Dash of stevia or sweetener of choice Dash of ground cinnamon, optional Pinch of salt 2/3 cup unsweetened almond milk (or milk of choice) Toppings: fresh raspberries and banana slices (or fruit of choice) a spoonful of almond butter (or any nut butter of choice) sprinkle of granola, optional Directions: Add all ingredients into a jar, bowl, or tupperware. Leave in the refrigerator to set overnight or for at least an hour. The next morning add your favorite toppings and enjoy cold. When ready to eat, if your oatmeal looks too thick, you could always add a little more milk until it reaches your desired consistency. *I like to use collagen peptides in my oatmeal because it adds a protein boost, and also helps my skin, nails and hair.
