Okay, so.. If you know we well, you'd know that I have a special place in my heart for Mexican food. I don't know what it is... Is it the flavor? Is it the heat? Is it the beans? Is it the lime, the cilantro, the pico de gallo? Is it the guacamole? Most probably haha. No, but seriously, I do love good authentic mexican food.
This recipe will be separated into 2 parts. The first one is for the beans (which you can prepare ahead of time and keep them in an airtight container in the fridge so you can eat it multiple times a week) and the second one is for the salad.
Recipe for beans: 1 can black beans (well rinsed in water to remove excess sodium) 1 tsp olive oil 1 tsp minced garlic 1 tsp sugar of choice (coconut sugar and brown sugar both work) 1 tsp any vinegar (I use apple cider) 1 tsp lemon juice (optional) 1/4 tsp cumin 1/4 tsp paprika 1/4 tsp chili powder 1 bay leaf salt and pepper to taste 1/8 tsp garlic powder 2 tbsp tomato sauce or pico de gallo or salsa *** DON'T OMMIT 1 tsp Cholula hot sauce (optional but recommended) 1/4 cup of chopped onions or bell peppers (optional) Directions: In a small sauce pan add oil, vinegar, garlic, onion, and bell peppers. Sauteé a little bit. Add the beans and all the remaining ingredients and cook on medium-low for about 5 minutes, stirring occasionally and checking to make sure they don't get too dry. If they do, add a little bit of water, but not too much. These aren't supposed to be soupy. After about 5-7 minutes, check the texture of the beans. If they seem a little hard, cook them a little longer and maybe add 1 more tbsp of water. But it should be done pretty fast. Once its all done, pour the beans into an airtight container and you can store them up to a week in the fridge and use them for meal prep! Recipe for salad: leafy green of choice (I rotate between Spring Mix, romaine, or spinach) 1/2 cup of the cooked beans (which should be heated in a pan or in the microwave with a little bit of water) 1 chicken breast, chopped 2 tbsp any pico de gallo/salsa you like (I like Trader Joe's fresh mild salsa which is in the refrigerated section) Guacamole (I use a pre-packaged single serving container of Guacamole, because it is convenient, and delicious) Hot sauce (I like Cholula) Directions: Heat the chicken and beans until they get nice and hot. While these cook, start layering all the other salad ingredients into a huge bowl. I start with the lettuce, then add the beans, chicken, pico de gallo, guac and all the hot sauce.
