Its been a long time since I've made a blog post in here. That is because I've changed a lot since my last post (July 2017) and I figured this blog needed a few changes here and there too because it just didn't represent me anymore.
Anyways, I am super excited to be writing on here again. I find its more convenient than Instagram for posting longer recipes because let's be real, most of us don't really read captions on Instagram haha. Let's talk about this bowl of blackberry oatmeal deliciousness. Ingredients: - 1/2 cup old fashioned rolled oats - 1 tsp chia seeds, optional - 1 cup unsw. vanilla almond milk - 1/4 cup water - 1 scoop collagen powder, optional - fat pinch of salt - stevia or sweetener of choice - topping: blackberries and Creamy Unsalted Almond Butter Directions for oatmeal: - add all ingredients in a saucepan (excluding the toppings) and cook on high until it boils. When it boils lower the heat to Medium-low. Stir to cook evenly and to prevent it from sticking to the bottom. When it starts to thicken, lower the heat until and cook until it reaches your desired consistency. For me it took about 7 minutes. - add to a bowl, top with berries, almond butter, and cinnamon (or your desired toppings) You could also do a quick berry-sauce: - in a microwave safe bowl mix together berries, dash of cinnamon and stevia, pinch of salt, and squeeze of lemon juice (optional), - heat in the microwave for 15 seconds, or until the berries become soft - add to your oatmeal along with your desired toppings, and enjoy right away 😋 I hope you give this recipe a try. It's super filling, flavorful, packed with fiber and of course, it is delicious!
